Selected before the refining period, its regular form, roundness and thick shell with a generous volume of flesh.

Then the oysters are refined for a minimum of 28 days in “claires”, which gives it a marine and terroir flavor of this clay basins filled up with the tides and softened with the rains. The “Spéciale de Claire” is distinguished by a more quantity of flesh, its volume in the mouth, and a remarkable balance between softness and salinity.
