These oysters are obtained through almost unchanged farming method since the 19th century, and it takes several years to obtain a Fine de Claire oyster.

Once matured after almost 3 years the oysters can be placed in “claires”: this clay basins fill up with the tides and soften with the rains.

During this maturing phase of a minimum of 28 days, it will develop its so-called terroir taste. Iodized with a mineral flavor, fine and delicate flesh that characterise the assets of this oyster.
